Rocco’s Any Berry Parfait
This recipe is kid-friendly, diet-friendly, waistline-friendly, convenience-friendly, budget-friendly. You can use any kind of cut-up fruit to make this parfait. Just make sure it’s fresh.
*Tip: To macerate means to soak the food in a liquid for a period of time so that the two elements flavor each other. In marination, only the marinade flavors the food.
2/ 3 cup fresh blueberries
11/ 3 cup fresh strawberries, hulled and cut into
4 ounces fresh raspberries
3 packets (3 grams) powdered stevia, such as
2 tablespoons chopped fresh mint
½ cup pomegranate juice
2 cups nonfat Greek yogurt, such as 0% Fage Total
1 teaspoon vanilla extract
2 tablespoons agave nectar
1. In a medium bowl, toss the fruit with the stevia, mint, and pomegranate juice. Stir till combined. Set aside and allow to macerate for 30 minutes.
2. In a medium bowl, add the yogurt, vanilla, and agave nectar. Stir until thoroughly combined.
3. Spoon ¼ cup of the yogurt mixture into each of 4 parfait glasses. Add a layer of the fruit and another ¼ cup of the yogurt. Top with the remaining fruit and serve.
