French Toast Omelet
Approximately 300 calories
2 large eggs
2 tablespoons low-fat milk
Sweetener (like Splenda)
1 piece whole-grain bread
Beat 2 large eggs with 2 tablespoons of low-fat milk. Add cinnamon and sweetener to taste (I use Splenda). You can add a dash of vanilla, if desired.
Soak 1 piece of whole-grain bread in the mixture, turning it over until the bread is completely coated. Pour the bread and egg mixture into a small frying pan sprayed with cooking spray, cover, and cook on medium heat.
Flip it over after about 2 or 3 minutes. Cook for another 1 to 2 minutes. Serve with extra cinnamon and a dash of powdered sugar. Delicious!
